"Well researched, user-friendly and highly pertinent source like none other. The essential, entirely original in its presentation and highly recommended, fact-focused complement to Bittmans' How to Cook Everything Vegetarian. What is so remarkable, and completely novel, about this book . . . is the accompanying detailed comparison of environmental footprint, in terms of averted water use, manure runoff and greenhouse gas emissions, of the vegan and non-vegan versions of each recipe." Gidon Eshel, Research Professor of Environmental Physics at Bard College."If we are to create a livable future on this planet, we will need to successfully lessen the demand for meat. and if we do that, it will be because of people like Patricia Tallman, and thanks to those people who read and heed her book." John Robbins, author of Diet For A New America.." . . Please read this fascinating and informative guide. let Patricia Tallman's guidance lead the way."
