In 1985, The Legendary Colophon Cafe was founded in Historic Fairhaven, Bellingham, Washington. Using recipes for simple, unpretentious foods, they began serving homemade soups, fresh salads, huge deli sandwiches, locally made ice cream and their own desserts. The staff contributed a great deal of knowledge as new people brought their own recipes for new soups, desserts, homemade quiches and pot pies. A great success through the years, the Colophon Cafe has been written up favorably in such publications as Fodor's North Coast, Northwest Best Places, Green Cuisine and Bon Appetit. They have won many awards for their food and the traditions for quality and creativity continue today. Because of the large volume of requests for their recipes, they have now consolidated their three cookbooks, Best Recipes, Best Soups, and Best Vegetarian Recipes into one volume. Pleasant dining!
